Planning Day!

It's Sunday night, so I'm working on a menu and grocery list for next week. I ordered a mandoline online that will be here Wednesday so I'm excited to plan a meal that uses finely sliced vegetables. Maybe it's because I'm a parent to a three year old (well, that's exactly why) but I have set my sights on making a simple, movie-inspired, Ratatouille. Yep, call me Remy. The actual recipe used in the movie is posted here, but I'll be making a simpler version of it. I figure since I'm not even sure how to pronounce "piperade" I have no business cooking it.  Kidding, kidding. Let's get to work!

Monday 
Breakfast: Asparagus & Sausage Fritata, orange slices
Lunch: Sunflower seed butter & Jam sandwich, tomato & spinach salad w/oil & vinegar 
Dinner: Vegetarian Chili & corn chips

Tuesday
Breakfast: Oatmeal with chopped apples & walnuts, smoked salmon side
Lunch: Egg salad sandwich, side of tomatoes & pickles 
Dinner: Vegetarian Chili over polenta & roasted asparagus

Wednesday 
Breakfast: Gluten Free, walnut blueberry muffins, vegetarian breakfast sausage, bananas
Lunch: Cheese quesadilla, black beans, sour cream & tomato slices
Dinner: Ratatouille over couscous

Thursday 
Breakfast: Bagel w/cream cheese & smoked salmon & grapes/oranges
Lunch: Ratatouille over couscous
Dinner: Sauted Greens over Cheesy Polenta

Friday 
Breakfast: Oatmeal with chopped apples & walnuts
Lunch: cheese tortilli, peas, cherry tomatoes 
Dinner: Pizza, Cesar salad

Saturday 
Breakfast: Gluten free pancakes, scrambled eggs, vegetarian sausage 
Lunch: Tofurkey sandwiches, olives
Dinner: Tacos (veggie ground, beans, lettuce, tomato, cheese, sour cream, soft taco wraps)

Sunday
Breakfast: Gluten free, chocolate chip, walnut muffins, vegetarian sausage
Lunch: Cream cheese/cucumber/tofurkey roll-ups
Dinner: Veggie Burgers, sweet potato fries, roasted asparagus 

Snacks:
Hummus, pretzels, cucumber slices, olives 
Raisins, Cheese slices, almonds
Graham crackers with sunflower seed butter, bananas
Orange, cinnamon-sugar toast, milk-tea
Guacamole, corn chips, tomato slices
Grapes, crackers, cheese slices 

Babyfood:
Oatmeal/banana
Carrot/zucchini/pear
spinach/potato/apple
